On several dozen pages of the guest book, placed at the end of the wooden counter of the Galeries du Cacao Fages, one can read numerous messages stained with chocolate imprints: “A delight for the eyes and the taste buds”, “An explosion flavors in every bite”, or “Best chocolatier in Toulouse and Haute-Garonne”.
In French, English, or Spanish, these praises are enough to put a smile on the face of the owner, Jérémy Fages, 35, an artisan chocolatier who is the pride of Toulouse residents. If the Pink City is full of culinary specialties well known to gastronomes, it has only recently become renowned for its chocolate, or more precisely for Les Galeries du Cacao Fages.
