500 g salmon fillet, portioned
Salt
pepper
Flour
Lemon sauce:
3 tbsp cooking oil
40 g shallot
30g butter
2 tbsp flour
200 ml vegetable broth
1 tsp salt
1 pinch of pepper
0.5 tsp sugar
Juice and zest from an organic lemon
200 ml whipped cream
Herbs, to taste (e.g. dill)
The timeless classic “salmon fillet with lemon sauce” is easy to make thanks to these step-by-step instructions:
For the salmon fillets:
Wash the salmon fillets in cold water, pat dry and season with salt and pepper. Dust generously with flour.
For the lemon sauce:
Finely dice the shallots and sauté in butter. Add flour and fry briefly. Deglaze with vegetable broth and bring to the boil. Let simmer for five minutes.
Stir in lemon juice, zest and whipped cream. Season with salt, pepper and sugar. Add herbs last.
Meanwhile, fry the salmon fillets on both sides in olive oil.
Serve salmon fillets with lemon sauce. This goes well with tagliatelle, rice or triplets.
