Most people have asked themselves whether a pack of eggs is still good. How to recognize this and how best to store eggs.

There's this package of eggs that has just expired in the fridge and you're wondering: Can eggs be used beyond their shelf life? How do fresh eggs differ from rotten eggs, and how should they best be stored?

How long do eggs last?

Eggs have a shelf life of at least 28 days from the date they are laid. You can calculate the laying date using the best before date (BBD) on the packaging. Eggs should only be stored in the refrigerator for three weeks after being laid. However, it is advisable to do this from the day of purchase. This increases the shelf life of the eggs considerably:

  • Raw eggs last about 4 weeks at room temperature.

  • Raw eggs will last in the refrigerator for up to 6 weeks.

  • Hard-boiled eggs last 1 to 2 weeks at room temperature.

  • Hard-boiled eggs last about 2 weeks in the refrigerator.

  • Raw egg yolks and egg whites last 8 to 10 months in the freezer.

  • Always store eggs in the refrigerator.

  • Do not wash the eggshell. This damages an invisible thin layer on the egg. And this means that germs can penetrate the egg much more easily.

  • Don't scare hard-boiled eggs if you want to store them for a longer period of time. The rapid drop in temperature causes small cracks to form in the shell through which microorganisms can penetrate. This shortens the shelf life.

  • Damaged eggs should be consumed immediately and only in heated dishes.

  • For dishes with raw eggs, they must not be older than 2 weeks. Store the relevant foods in the refrigerator for a maximum of 24 hours.

  • Once the best-before date has expired, only use eggs for heated dishes.

How to recognize spoiled eggs

Would you like to know whether a particular egg is still safe to eat? You can find out with these three simple tests:

The swimming test

Place the egg in a glass of cold water. A fresh egg remains flat on the floor. When the egg sits upright at the bottom and sits in the water, it can be up to 3 weeks old. Then it is best to use it fully heated. However, if the egg floats high to the surface of the water, it is at least 4 weeks old. Then you should stop using it.

The reason: There is a small air chamber in each egg that ensures buoyancy in the water. If the egg loses moisture over time, air enters instead. The older the egg is, the more air collects in it - until it eventually rises to the surface of the water.

The shake test

The name says it all: shake the egg a little and listen. A fresh egg will not make any sounds, but with an older egg you will hear gurgling noises. Over time, the egg white becomes more and more thin and at some point produces a distinctive noise when shaken. If you only hear a faint gurgle, you should do the cracking test to decide whether you are still using the egg.

The impact test

Crack the egg into a separate small bowl and look at it carefully. In a fresh egg, the yolk is domed and surrounded by a thick yolk. If the yolk is flattened and the egg white is watery, the egg is already older. If an older egg still smells neutral, you may be able to use it while still warm. But as soon as you notice a sulphurous smell, you should definitely throw away the egg.
