The frittata is an Italian omelette. It can be prepared with just egg or add sautéed onion, grated cheese, vegetables, or herbs.

It is a tasty vegetarian dish, thanks to the cheerful use of black pepper and cheese. It's a light starter or main dish, without the excess fat - delicious, on the other hand - of French fries. It doesn't look bad as a sandwich, and it is easy to transport, making it ideal for a picnic. It should be made in a pan, on both sides, and not in the oven, and should be served with a few sprigs of parsley (about 3 generous tablespoons, once). It is usually a fairly flat affair, in the sense that it is usually not very tall and a little dry for Spanish tastes. The most common thing is to add something else, some vegetables, and sometimes, although not always, a little Grana Padano, Parmigiano Reggiano, or Roman pecorino.
